Deceptively Delicious Chocolate Chip Cookies
Have any of you used Jessica Seinfeld’s Deceptively Delicious cookbook? I bought it a few years ago because I really liked the idea of finding ways to add fruits and vegetables to recipes. One of my favorite recipes in the book are her chocolate chip cookies. But this is no ordinary chocolate chip cookie. It’s healthy. In fact, it contains a secret ingredient: chickpeas!
I know what you’re thinking. This sounds disgusting, right? Who would put chickpeas with chocolate? I thought that too. That is, until I tried it. And I must say, they are probably the best chocolate chip cookies I make. I’m completely serious. They are delicious, healthy, soft with great texture. Even Sophie eats them (although she doesn’t know there are chickpeas in them).
So today I thought I’d share the recipe I use for Jessica’s cookies. If you’re feeling adventurous one afternoon, give these cookies I try. I guarantee you’ll be deliciously surprised!
Deceptively Delicious Chocolate Chip Cookies
1 cup brown sugar
3/4 cup slightly softened margarine (I use butter)
2 egg whites
2 teaspoons vanilla extract
1 (15 oz.) can of chickpeas, drained
2 cups chocolate chips
2 cups flour
1/2 cup old fashioned oats
1 teaspoon baking soda
1/4 teaspoon salt
Preheat oven to 350 degrees. Coat a cookie sheet with baking spray.
Beat sugar and margarine/butter until smooth. Beat in egg whites and vanilla. Then add chickpeas and chocolate chips. Add flour, oats, baking soda and salt.
Drop by tablespoonful onto baking sheet. Bake 11 to 13 min, until golden brown.

Intriguing. I think I’d cut the sugar a bit. But they are healthy with chick peas and oats!
You’ve used different ingredients I see. Does it make any difference in terms of taste and texture if I use chick peas and baking powder?
This one I have got to try! Chickpeas are so good for you and personally I would feel all self-righteous as I eat my cookies! (LOL) I’d also like to sneak some past my kids and see if they can tell the difference, as they know everything (or think they do…) Have a great weekend Momma and get out those Easter crafts, Sophie’s waiting!
You just blew my mind with that! chick peas?! Interesting…
I’m definitely going to try these. Although knowing there are veggies in my cookies might lead me to eat even more of them. Perhaps not the greatest thing for my waistline.
I tired Sara Grambusch’s chocolate-chip cookie dough recipe that uses chick peas, and realized that they are pretty darn yummy when mixed in with the sweet stuff. These look great, too!
OMG, if I find a way to substitute the butter, I could make these for my vegan family. Who would have ever guessed. Thanks for sharing Leah!
I’m always fascinated by desserts and sweets recipes made from veggies. Thanks for sharing this unusual and tasty recipe.
Garbanzos are a fabulous secret ingredient. They are really good blended up in banana bread and pancakes as well. I blend spinach with the eggs in every recipe I make too. Everything I make is green, lol.
Hmmm now that you mention it, I’m pretty sure I OWN this recipe book & have yet to try anything out of it. So thanks for the the reminder!
Omgosh, I wanna make these. I use chickpeas in hummus, and love them, so I’m curious to see how they hold up under cookie pressure.
Even I could benefit from tricking myself into more veggies.
I tried out a chickpea salad sandwich last week (in place of tuna salad) and the Hubs and I both loved it.
Leah, another winning recipe! Who can say no to anything with chocolate chips in it? Not me! I like the addition of chick peas to this recipe! I’m intrigued as to how that alters the taste! I must try this.
