Peppermint Swirl Cupcakes

Be warned … I am on a baking spree and it will continue during my two-week vacation (starting now).

I whipped up peppermint swirl cupcakes for my office potluck this past week. I wanted to make something festive and unique, and of course, holiday-ish. So I got a box of white cake mix, my red food coloring, peppermint extract and went to work.

I followed the instructions on the cake batter box with the exception of adding about 1 tsp. peppermint extract. When the mix was combined, I added a few drops of red food coloring into the batter and, with a knife, gently swirled the red with the white. It looked like this.

I then scooped the batter into muffin cups, baked them off and frosted them with Vanilla Buttercream Frosting from Our Best Bites. I sprinkled the cupcakes with red sugar and topped them with either a candy cane or peppermint Hershey kiss. Super easy and delicious!

    Very festive Leah. I’ve been craving holiday baked goods since the vegan thing has precluded me from baking. However, we went last night to the Loving Hut, the vegan restaurant you told me about, and I ordered vegan German chocoloate cake. That is my favorite dessert, so I was worried, but it was actually good enough to satisfy my dessert craving! Thanks for the recommend, and for the great blog postings and photos that let me eat vicariously thru you :>)

    I wanted to thank you for this one. Being a non-baker, I am still forced to bake for school functions. This was an easy one (even one I could tackle). They were a big hit in my son’s holiday party. A cupcake all festive. I used peppermint bark instead of the peppermint – so as to add a touch of chocolate. Hopefully this will be the extent of my baking for the rest of the year. 🙂
