Sophie Turns 4 Today!
Sophie turned 4-years-old today. While it’s amazing to see the excitement on her face, it is bittersweet to me. Sweet because she’s another year older and I see her change and grow every day. Bitter for those same reasons — she’s getting older and I’ll never have these early years back with her. But I do love every day with Sophie more and more. And I’ll gladly take my independent young girl over the trying infant days (although those days were special too).
I was fortunate to bring Sophie’s birthday treat to preschool today. I wanted to do something unique for the class treat. Instead of cake or cupcakes, I turned to Birthday Cake Cookies.
The idea was inspired by this recipe. I say inspired because instead of cake mix, I used Pillsbury Funfetti Cookie mix and I made my own buttercream frosting for the inside. Buttercream icing is simple — just blend 2 lbs. powdered sugar, 1/2 cup soft butter, 1 Tbsp. vanilla, and 1/4 cup water or milk until smooth. By the way, I needed three boxes of cookie mix and one batch of frosting to make 25 cookie sandwiches.
Happy Birthday my Sweet Sophie! Thank you for changing my life for the better and helping me discover myself. I can’t wait to see what you’re going to do next. It’s a privilege to be your mommy.
Happy birthday Sophie!
Happy Birthday darling Sophie!! (((hugs)))
I love those photos through the years! HAPPY BIRTHDAY Sophie!! 4 is so fun! (p.s. the cookies look/sound amazing; great idea!)
That cake is adorable. And those cookies look yum!
I love this post — and happy birthday to Sophie! I also love the idea of the cake cookies, so clever and much easier to eat than a peice of cake! 😉
It does go by fast. Enjoy every minute.
Happy brithday to Sophie – she’s a lucky girl eating all of those birthday cake cookies.
The cookies just put a huge smile on my face!

What’s sweeter? Her big grin or those pretty cookies? I’d say – both!
And having Mom come to class with home-made goodness? Just priceless.
Cheers! MJ
Happy Birthday Sophie! She is too adorable!!
Happy birthday to your beautiful little Scorpio!
Happy Birthday to Sweet Sophie! The cake and the cookies look delicious! *sigh* they grow fast, don’t they?
Looks like Sophie had the sweetest birthday ever. Way to go, kiddo!
Your girl is growing so quickly, it’s great you’re recording so many images along the way. Love her cake! Sophie always looks so, well, LOVED!
Awww Leah – I so understand those Bittersweet Birthdays! And yet, it’s so much fun to watch them grow 🙂
Those cookie cakes look delicious. Thanks for sharing your frosting recipe. I think my girls & hubby will LOVE these.
Amazing cake – you should go into business! I was very proud of the cake Imade for my 14 yo this summer: shaped and decorated like an xBox controller. Not so proud of his pastime, however 🙁
Happy birthday to Sophie- she adorable!
Well happy birthday to Sophie! Those cake cookies looks so yummy!
The cookies look amazing. Happy birthday to your sweet girl. You’re a wonderful mommy Leah!
WOW! Happy birthday (a day late … sorry!) to Sophie! Isn’t it amazing how time flies? And also, I’ve been a horrible blog buddy. Life sometime gets the best of us. LOL! I will make it a priority to get over here more often and read your stuff! I do subscribe, but just haven’t been able to keep up with everyone’s blogs lately. Ahhh!
Anyway, happy, happy, HAPPY birthday to your little girl!
Awww, happy birthday to such a wonderful girl. I agree–when my daughter turned four the world seemed like a different place. No longer a toddler, she was suddenly a girl. We let her venture out onto the beach with her older cousins–within our window view– to play in the sand for the first time. It was landmark.
Cherish every moment…time passes so quickly when you look back.
The happiest of birthdays to you, sweet Sophie! Can’t believe you’re FOUR! Have lots of fun and adventures on your way to FIVE. 😉 LOVE the birthday cookie sammies! Can’t wait to hear all about your party! XO
Happy Birthday, Sophie!!! 🙂
Thank you for all the lovely birthday wishes to Sophie. She and I both appreciate it! And thanks – as always – for reading. You all truly make my days!
