Thought I’d write a quick update on how the Once-A-Month dinners have turned out. I’ve been pretty impressed – tasty food, super quick to make, unique tastes, and husband and toddler loves them too.
Before this endeavor, I was a once-a-month frequent flyer at Dream Dinners. Now I love Dream Dinners, but it may be taking a back seat to this Once-A-Month strategy. I think this may be costing me less too. We’ll see after a few months of Once-A-Month meals.
Here’s a list of what I’ve cooked so far from Cycle A. I also noted the side dish I served with the dinner.
Creamy Chicken Enchiladas
Beef and Barley Soup
Stuffed Shells
Zanzibar Chicken (w/ brown rice)
Picadillo Chicken Pizza
Sloppy Joes (w/ oven-baked French fries)
Lime-Grilled Mahi Mahi (w/ lemon orzo and spinach)
Sweet Mustard-Glazed Salmon (w/ brown rice)
So far, I’d say the Picadillo Chicken Pizza and Beef and Barley Soup have been my favorites. These are two dinners I never would have thought to cook on my own.
