Peppermint Swirl Cupcakes

Be warned … I am on a baking spree and it will continue during my two-week vacation (starting now).

I whipped up peppermint swirl cupcakes for my office potluck this past week. I wanted to make something festive and unique, and of course, holiday-ish. So I got a box of white cake mix, my red food coloring, peppermint extract and went to work. I followed the instructions on the cake batter box with the exception of adding about 1 tsp. peppermint extract. When the mix was combined, I added a few drops of red food coloring into the batter and, with a knife, gently swirled the red with the white. It looked like this.

I then scooped the batter into muffin cups, baked them off and frosted them with Vanilla Buttercream Frosting from Our Best Bites. I sprinkled the cupcakes with red sugar and topped them with either a candy cane or peppermint Hershey kiss. Super easy and delicious!
