Sophie Turns 4 Today!

Sophie turned 4-years-old today. While it’s amazing to see the excitement on her face, it is bittersweet to me. Sweet because she’s another year older and I see her change and grow every day. Bitter for those same reasons — she’s getting older and I’ll never have these early years back with her. But I do love every day with Sophie more and more. And I’ll gladly take my independent young girl over the trying infant days (although those days were special too).

I was fortunate to bring Sophie’s birthday treat to preschool today. I wanted to do something unique for the class treat. Instead of cake or cupcakes, I turned to Birthday Cake Cookies.

The idea was inspired by this recipe. I say inspired because instead of cake mix, I used Pillsbury Funfetti Cookie mix and I made my own buttercream frosting for the inside. Buttercream icing is simple — just blend 2 lbs. powdered sugar, 1/2 cup soft butter, 1 Tbsp. vanilla, and 1/4 cup water or milk until smooth. By the way, I needed three boxes of cookie mix and one batch of frosting to make 25 cookie sandwiches.

Happy Birthday my Sweet Sophie! Thank you for changing my life for the better and helping me discover myself. I can’t wait to see what you’re going to do next. It’s a privilege to be your mommy.
